STEAMED
BROCCOLI DIPPED IN CIDER VINEGAR
The flavor will complement the flank steak and saffron rice.
1 pound broccoli
1/8 teaspoon salt
1/8 teaspoon white pepper
1/3 cup cider vinegar
Trim broccoli, wash, and cut into pieces. Arrange on a steamer rack, place
over boiling salted water, cover, and steam for 10 minutes or until
tender-crisp. Arrange in a serving dish and keep warm. Spoon cider vinegar
over the broccoli, or serve in small dipping bowl on the side.
